Our Story

Flo grew up in the ice cream business her father started in 1988, so great ice cream has always been part of her world. When she joined the company in 2020, followed shortly by her husband Joe, who brought experience from brewing and food service, they saw a chance to create something new and fresh.

Both are serious about food. Together, they set out to build a range made specifically for chefs: thoughtfully crafted, ingredient-led, and designed to complement desserts rather than compete with them.

After finishing a history degree he’s still yet to properly use, Joe drifted into the brewing world in Edinburgh in 2015, powered mainly by a love of food, drink and not sitting at a desk all day. Starting out cleaning floors, he went on to complete a diploma in brewing before moving into sales.

A move to Bristol with Flo saw him join local legends Wiper and True, working with national restaurant groups and retailers including Waitrose, Marks & Spencer and Sainsbury's.

Joe married Flo on the farm in 2022. The interview process, however, continued until 2025, when he officially joined Marshfield Farm Ice Cream to help deepen the business’s connection with chefs and shape a more foodservice-led approach through Acres.

When he’s not talking to chefs, Joe can usually be found trying to perfect a slow-ferment bread recipe, or tidying up after the combined destruction of his spaniel and toddler.

Flo also studied History at the University of Edinburgh, although unlike Joe she did briefly consider using it. Instead, as a dairy farmer’s daughter, she took the highly unexpected step of getting her first job in dairy, joining Longley Farm on their graduate scheme. The role took her from deepest Yorkshire to Japan and Australia, giving her a proper global view of food production and what good looks like.

She later joined Mars Wrigley as a sales representative back in Edinburgh, before moving to Bristol to be closer to home and taking a role with KIND Snacks, still firmly in the world of sales and brand building.

Lockdown changed things. Flo and Joe moved back to the farm and, after a short period of pretending she didn’t want to join the family business, Flo stopped resisting and jumped in with both feet at Marshfield Farm Ice Cream.

A big foodie at heart, Flo is driven by the belief that ice cream deserves the same care and attention as every other part of a menu. With Acres by Marshfield Farm, she’s on a mission to make it the go-to range for chefs who care about provenance, flavour and proper craft.
